Please note. Cuisine bucketing is inherently subjective — bakeries, fusion concepts, kopitiams, modern Asian restaurants and pan-regional brands don’t fit neatly into any taxonomy. Our buckets are described in the Method section at the bottom; reasonable people will disagree on edge cases. If you’re a brand owner and disagree with how your concept is classified, please get in touch — we’ll either re-bucket with reasoning or note your preferred framing alongside the current one. Nothing here is a judgement of cuisine authenticity, quality, or value.

Method & judgment calls
- Local / Immediate-Regional = Singapore, Malaysia, Indonesia, Peranakan; local hawker-Chinese (chicken rice, bak kut teh, wanton mee, char kway teow, fishball noodle); Malay/halal-local; and local-style “Western” (Astons, Collin’s, Han’s, kopitiam Western) — per your instruction that Western-Asian is local.
- East Asian lumps Korea/Japan/China/Taiwan. Bubble tea is counted here (Taiwanese tradition) even for SG operators (KOI, LiHO, Each-a-Cup); new-style Chinese tea/coffee (HeyTea, Mixue, Chagee, Luckin) also here.
- European/Western = Italian/French/general Western incl. American fast-food (McDonald’s, KFC) and Western coffee (Starbucks, Coffee Bean).
- Other Asian = Thai, Vietnamese, Filipino, etc. (beyond the immediate region).
- Other/Mixed = Middle Eastern, Mexican, plus origin-agnostic desserts / ice-cream / juice / generic cafes that have no single national cuisine.
- Bakeries/cafes are the fuzziest: classed by brand origin where known (Paris Baguette→Korea, Chateraise→Japan, Tiong Bahru Bakery→French, BreadTalk/Polar/Four Leaves→local), else Other/Mixed.
